For me, coconut cookies are a heavenly snack. More than that, this cookies are chewy and melts in the mouth.
Ingredients for Coconut cookie recipe with oat flakes:
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1cup coconut flakes
- 1cup oat flakes
- 1/2 cup butter (one stick)
- 3/4 cup sugar
- 2 tablespoons corn syrup ( I like to use honey)
Preheat oven to 180°C/350°F.
In a sauce pan melt the butter with corn syrup. Let it cool.
In a large bowl, stir together all dry ingredients. Add the butter and mix until all the ingredients are well incorporated.
Shape into balls using one tablespoon of dough for each cookie.
Place cookies 2 inches apart in the cookie pans and press them with a fork.
Bake for 15-20 minutes and let them them rest 5 minutes in the pan, than transfer on wire rack.
