This is a healthy recipe of apple muffins, because it has good ingredients for your health: brown sugar, whole wheat flour and canola oil. It’s a low fat recipe, but delicious and full of flavor from the applesauce and cinnamon.

Ingredients for apple muffins recipe:
- 3/4 cup plus 2 tablespoons packed brown sugar
- 1/4 cup chopped pecans /walnuts
- 1/2 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1 cup whole-wheat pastry flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup vegetable oil (canola oil)
- 2 large eggs
- 1 cup natural apple sauce
- 1 teaspoon vanilla extract
- 3/4 cup low fat buttermilk
- 1 apple peeled, cored and cut into small pieces
Preheat oven to 400 degrees F.
In a small bowl mix together 2 tablespoons of the brown sugar, cinnamon and pecans.
In a medium bowl, mix together both cups of flour, baking soda and salt.
In a large bowl mix the remaining 3/4 cup of brown sugar with the oil. A few seconds are enough, until the sugar is soaked in oil.
Add in the eggs and mix at high speed with and electric mixer, until light and fluffy.
Add in the apple sauce and vanilla.
Mix in the flour mixture in two batches, alternating with the buttermilk.
Mix just until well combined. Fold in the apple chunks.
Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture.
Bake for 20-35 minutes or until a toothpick inserted in the center comes out clean.
Cool completely on a rack and enjoy your apple muffins.
