I just love making simple banana cake recipes and baking new recipes. This time I found Emeril Lagasse banana bread so I had to try it!
The result is this easy and moist banana bread with some extra cinnamon that I always have to double it to be on my taste
.

Ingredients:
- 1/2 cup solid vegetable shortening (I used butter at room temperature)
- 1 cup sugar
- 2 eggs
- 3/4 cup mashed ripe bananas
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups flour
- 1/2 cup chopped macadamia nuts
- pinch of cinnamon (I just adore cinnamon so I used 2 teaspoons
)
Preheat the oven to 350 degrees.
Using an electric mixer, cream the butter with the sugar at high speed. Add in the eggs one at a time, than add the bananas and mix well.
In a medium bowl, stir together the baking soda, salt, flour, nuts and cinnamon and add the mix to the dough. Mix until the dough is formed.
Pour the dough in a prepared pan and bake for about an hour or until a toothpick inserted in the center comes out clean.

Nothing as good as banana bread! I love that you used macadamias in it…will definitely try that.
