The recipe for this apple cookies is from one of my favorite cookies recipes book – Cookies: 1,001 Mouthwatering Recipes From Around the World.
Ingredients for Simple apple cookies recipe:
- 2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon powder
- 1/2 teaspoon salt
- 1/2 cup butter (100 gr), room temperature
- 1/2 cup sugar
- 1/4 brown sugar (I used 1/2)
- 1 large egg
- 1 cup apple sauce
- 1 chopped apple
- 1 cup chopped walnuts
Preheat oven to 190°C/375°F.
Prepare three cookie pans.
In a small bowl, sift together flour, baking powder, baking soda, cinnamon and salt.

In a large bowl, with an electric mixer beat at high speed the butter and sugar (white and brown) until fluffy and creamed.

Incorporate the egg and the apple sauce.

Add the dry ingredients and mix until the batter has formed. Using a tablespoon stir in the apple chunks and walnuts.

Drop one tablespoon batter 2 inches (5 cm) apart onto the prepared baking sheets.
Bake for about 15-20 minutes, until the edges are lightly browned.
Let them cool one minute on the pan, than transfer on wire rack.
