This banana cookies are incredible because there are full of flavor, moist and a little crunchy too. You have a healthy portion of oatmeal, moist banana chunks and chocolate pieces… you must try them!
Ingredients for simple banana cookies:
- 1 1/4 all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 6 tablespoons unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup oatmeal
- 2 cups (12 ounces) semisweet chocolate chips
- 2 bananas, cut into 1/4 to 1/3 inch pieces
Preheat the oven to 180°C/350°F.
In a medium bowl, stir together the flour, baking soda, cinnamon and salt.
In a large bowl, using an electric mixer, mix at medium speed the butter with granulated sugar and brown sugar until smooth.
Add in the egg and vanilla and mix until blended.
At low speed, add the flour mixture and mix just until it is incorporated.
With a spoon mix in the oatmeal and chocolate spoon. Stir until the ingredients are evenly distributed.
Mix in the banana pieces until evenly distributed.
Drop spoonfuls of dough on prepared baking sheets.
Bake the cookies for about 18 minutes or until the edges are lightly browned.
